Coconut biscuits are quick and easy to make. You need only three ingredients and you will eat soft biscuits with a nice crust. If you want to make different versions you can add lemon or lime peel to the dough to give a touch of extra freshness or, after baking them, you can dip them in melted dark chocolate for a more delicious result.
This recipe is also a great idea to use egg whites left over from other recipes.
INGREDIENTS (for 15-20 biscuits)
- 150g grated coconut
- 120g sugar
- 3 egg whites
HOW TO MAKE coconut biscuits
Pour the grated coconut and sugar into a bowl and mix them. Add the egg whites and work the mixture with a spoon.
Cover a baking tray with baking paper and make little balls, like walnut size (about 20g for each ball). Place the balls on the baking sheet and press them lightly on the surface so that they crush a little. If you have difficulty making the balls, moisten your hands so that the dough does not stick.
Bake at 392°F (200°C) for about 10/12 minutes in a preheated fan oven until the biscuits are slightly Golden.
